Surfactants

 

These chemicals have the ability to reduce the surface tension of a liquid, interfacial tension between two immiscible liquids and the contact angle between a solid and a liquid. Surfactants are basically organic molecules composed of a soluble in oil (hydrophobic) and a soluble in water (hydrophilic) group. Surfactants can be soluble in water or soluble oil with a determined solubility by the relative sizes of the two groups.
